Ingredients:

  • 4 large russet potatoes (washed and cubed)
  • 2 tbsp olive oil
  • 1 lb ground beef (or ground turkey)
  • 1 packet taco seasoning (or homemade blend)
  • ½ cup water
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ½ cup salsa
  • 1/4 cup chopped green onions
  • 1/4 cup diced tomatoes
  • ¼ cup sliced ​​black olives (optional)
  • 1 avocado (sliced, optional)

  1. Preheat Oven:  Set your oven to 400°F (200°C).
  2. Prepare Potatoes:  Toss the cubed potatoes with olive oil, salt, and pepper. Spread them evenly on a baking sheet.
  3. Roast Potatoes:  Bake for 30–35 minutes, flipping halfway through, until golden and crispy.
  4. Cook Meat:  While the potatoes bake, cook the ground beef in a skillet over medium heat. Drain excess grease.
  5. Add Seasoning:  Stir in the taco seasoning and water. Simmer for 5 minutes until thickened.
  6. Assemble Dish:  Once the potatoes are done, top them with the cooked taco meat and shredded cheese.
  7. Melt Cheese:  Return to the oven for 5 minutes until the cheese melts.
  8. Garnish:  Add sour cream, salsa, green onions, tomatoes, and other toppings.
