Old-Fashioned Southern Chicken Salad is a classic, comforting dish made with tender cooked chicken, creamy mayonnaise, and simple seasonings. Lightly crunchy and full of flavor, it’s perfect for sandwiches, crackers, or served over lettuce for a traditional Southern-style meal.

Ingredients: 3 cups cooked chicken finely chopped or shredded, ¾ cup mayonnaise, 1 tablespoon yellow mustard, ½ cup finely chopped celery, ¼ cup finely chopped onion, 2 hard-boiled eggs chopped, salt and black pepper to taste, and optional paprika for garnish.

To prepare the chicken salad, place the cooked chicken in a large mixing bowl. Add the mayonnaise, mustard, celery, onion, and chopped eggs. Stir gently until everything is well combined.

Season with salt and black pepper to taste. Adjust the mayonnaise if a creamier texture is desired.

Cover and refrigerate for at least 1 hour to allow the flavors to blend. Before serving, stir once more and sprinkle lightly with paprika if desired.

Serve chilled on sandwich bread, croissants, crackers, or over fresh lettuce.
