I'm not a professional cook, but this meal has been a success every time!
This slow cooker hearty beef and vegetable spaghetti is a comforting dish perfect for those chilly Midwestern evenings. It's a family favorite that combines the rich flavors of ground beef and a medley of vegetables with the satisfying texture of spaghetti. This dish is not only delicious but also convenient, as it simmers away in the slow cooker, allowing you to focus on other tasks. It's a wonderful way to gather the family around the table and enjoy a homemade meal together.
This hearty spaghetti pairs beautifully with a simple green salad drizzled with balsamic vinaigrette. A side of warm, crusty garlic bread is perfect for soaking up the savory sauce. For a touch of freshness, serve with a bowl of seasonal fruit or a light cucumber and tomato salad.

Variations & Tips
For a vegetarian version, omit the ground beef and add more vegetables such as zucchini or mushrooms. If you have picky eaters, you can blend the sauce to hide the vegetables before adding the spaghetti. For a spicier kick, add a pinch of red pepper flakes. You can also substitute ground turkey or chicken for the beef for a lighter option.
