Each time I serve this, it vanishes quickly. An absolute favorite among guests!
By Morgan Reed
Cheese and potato croquettes are a delightful fusion of creamy mashed potatoes and gooey cheese, encased in a crispy golden shell. This dish has its roots in French cuisine, where croquettes were originally made with meat. However, the potato version has gained popularity worldwide due to its simplicity and comforting flavors. These croquettes are perfect for anyone looking to indulge in a savory snack or a side dish that combines texture and taste. The combination of potatoes and cheese is universally appealing, making this dish a hit at family gatherings or casual dinners.
Cheese and potato croquettes pair wonderfully with a fresh green salad, providing a crisp contrast to the creamy interior of the croquettes. A tangy dipping sauce, such as a garlic aioli or a spicy sriracha mayo, can elevate the flavors even further. For a heartier meal, serve them alongside roasted vegetables or a grilled protein like chicken or fish. The croquettes also make a great addition to a tapas-style spread, where they can be enjoyed with a variety of small plates and appetizers.
Cheese and Potato Croquettes
Servings: 4
Ingredients
2 cups mashed potatoes
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1/4 cup chopped green onions or chives
1 egg, beaten
1 cup breadcrumbs
Salt and pepper to taste
Vegetable oil for frying
Directions
1. In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, and green onions. Season with salt and pepper to taste.
2. Shape the mixture into small, oval-shaped croquettes, about 2 inches long.
3. Dip each croquette into the beaten egg, ensuring it is fully coated.
4. Roll the croquettes in breadcrumbs, pressing gently to adhere.
5. Heat vegetable oil in a deep pan over medium-high heat.
6. Fry the croquettes in batches until they are golden brown and crispy, about 3-4 minutes per side.
7. Remove the croquettes from the oil and drain on paper towels.
8. Serve hot, garnished with additional chopped green onions or chives.
Variations & Tips
For a different flavor profile, try adding cooked bacon bits or diced ham to the potato mixture. You can also experiment with different cheeses, such as mozzarella or GruyΓ¨re, for a unique twist. If you prefer a lighter version, consider baking the croquettes in the oven at 400°F (200°C) for 20-25 minutes, turning halfway through, until they are crispy and golden. For a gluten-free option, use gluten-free breadcrumbs or crushed cornflakes as the coating.
