Chicken with Rice and Mushrooms

 

For the Chicken:

  • 4 boneless chicken breasts (sliced)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (optional)

For the Mushrooms:

  • 2 cups fresh mushrooms (sliced)
  • 1 large onion (chopped)

For the Rice:

  • 1 cup rice (short or long grain)
  • 2 cups chicken broth or water
  • 1 teaspoon dried herbs (such as thyme or oregano)

Instructions

  1. Prepare the Chicken:

    • In a bowl, season the chicken slices with salt, pepper, garlic powder, and paprika. Let it sit for 15 minutes.
  2. Cook the Chicken:

    • In a large skillet, heat the olive oil over medium heat.
    • Add the chicken slices and cook until browned on both sides (about 5-7 minutes). Remove from the skillet and set aside.
  3. Prepare the Mushrooms and Onion:

    • In the same skillet, add the chopped onion and cook until translucent. Then add the mushrooms and cook until tender (about 5 minutes).
  4. Add the Rice:

    • Add the rice to the skillet and stir for a minute until coated in the oil.
    • Then add the chicken broth and dried herbs. Bring to a boil.
  5. Cook the Mixture:

    • Once boiling, return the chicken slices to the skillet. Cover and simmer on low heat for 20-25 minutes, or until the rice is cooked and has absorbed the liquid.
  6. Serves:

    • Serve the dish hot, garnished with fresh herbs if desired.
