Chicken Stuffing Casserole Recipe:
Ingredients :
6 ounces stuffing mix, prepped based on box
2 ½ cups diced cooked chicken breast
1 diced onion
1 chopped carrot
1 chopped rib of celery
1/2 cup frozen peas
1 peeled and diced potato
3 tablespoons butter
2 tablespoons olive oil
3 tablespoons flour
1 ½ cups chicken broth
1 cup half-and-half
Salt and pepper to taste
Instructions :
1. Preheat the oven to 375°F (190°C) and grease a 9x13 casserole dish with nonstick spray.
2. In a skillet over medium heat, sautรฉ onions, celery, carrots, and potatoes until tender. Remove the vegetables, melt butter in the skillet, whisk in flour, and cook for 2-3 minutes.
3. Add chicken broth and half-and-half, whisking until smooth. Season with salt and pepper. Return vegetables to the skillet and simmer until tender.
4. Meanwhile, prepare stovetop stuffing mix following package directions, and keep it warm.
5. Add chicken and peas to the skillet, cook for 2 minutes, then transfer the mixture to the casserole dish. Top with the prepared stuffing.
6. Bake for 25 minutes until lightly browned.
Optionally, garnish with chopped fresh herbs before serving.
