Ingredients

  • 4 bone-in pork chops (about 1-inch thick)
  • 2 tablespoons olive oil
  • 4 garlic cloves , minced
  • 1 tablespoon fresh rosemary , chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme , chopped (or 1 teaspoon dried)
  • Salt and pepper : To taste
  • 1 tablespoon balsamic vinegar (optional)
  • 1 pound baby potatoes , halved
  • Fresh parsley : For garnish

Instructions

1. Prepare the Potatoes

  • Preheat your oven to 400°F (200°C).
  • In a bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet.

2. Roast the Potatoes

  • Roast the potatoes in the preheated oven for about 25-30 minutes, or until golden and crispy, flipping halfway through.

3. Season the Chops

  • While the potatoes are roasting, season the pork chops with salt and pepper on both sides.
