Ingredients
- 4 bone-in pork chops (about 1-inch thick)
- 2 tablespoons olive oil
- 4 garlic cloves , minced
- 1 tablespoon fresh rosemary , chopped (or 1 teaspoon dried)
- 1 tablespoon fresh thyme , chopped (or 1 teaspoon dried)
- Salt and pepper : To taste
- 1 tablespoon balsamic vinegar (optional)
- 1 pound baby potatoes , halved
- Fresh parsley : For garnish
Instructions

- In a bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet.
2. Roast the Potatoes
- Roast the potatoes in the preheated oven for about 25-30 minutes, or until golden and crispy, flipping halfway through.
3. Season the Chops
- While the potatoes are roasting, season the pork chops with salt and pepper on both sides.
- In a small bowl, mix together minced garlic, rosemary, thyme, and balsamic vinegar (if using).
4. Sear the Chops

5. Combine and Serve
- Once the pork chops are cooked, add the garlic and herb mixture to the skillet, allowing it to cook for another minute until fragrant.
- Serve the Messina Chops alongside the roasted baby potatoes, garnished with fresh parsley.
Tips
- Sides : Pair with a side salad or steamed vegetables for a complete meal.
- Flavor Variations : Feel free to experiment with different herbs or add a splash of lemon juice for brightness.
