Ingredients:
2 medium zucchini (about 400g)
1.5 teaspoons salt
6 cloves garlic, minced
Freshly ground pepper (to taste)
1/4 cup chopped fresh dill
1/4 cup chopped fresh parsley
Pinch of red pepper flakes (optional)
3 tablespoons olive oil

Instructions:

Rinse the zucchini and pat them dry with a kitchen towel. Trim the ends and slice them thinly.
Place the zucchini slices in a bowl and sprinkle with salt. Toss well to coat evenly and let rest for about 15 minutes to remove excess moisture. After 15 minutes, drain the zucchini and pat them dry with a kitchen towel.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chili flakes (if using) and sauté for about 1 minute, until fragrant.

Add the zucchini slices to the pan, spreading them out in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the zucchini are tender and lightly browned.

Season the zucchini with freshly ground black pepper to taste.
Remove the pan from the heat and add the chopped dill and parsley. Stir well to combine.
Transfer the garlic zucchini to a serving platter and garnish with additional chopped herbs, if desired.
Serve immediately as a side dish or as part of a tapas assortment.
